4. 3 small green cardamom
18. 1 inch fresh ginger, peeled and julienned
2. 7 cups fresh chopped/baby leaf spinach (+ 1 cup loosely packed fresh cilantro if you are not in favor of the flavor of spinach. This is optional)
3 lb chicken, skinless and preferably bone in (any kind will do. I have used 6-8 medium sized drumsticks here)
6. 8 – 10 whole peppercorn
10. 5-6 hot green chili pepper (if you do not like the heat, remove seeds and membranes. be careful and use gloves to de seed)
16. 1.5 teaspoon garam masala powder (homemade or store bought)
1. 5 tablespoon oil
9. 6-8 cloves of garlic (a little less than 1/4 cup)
11. 4 cup sliced/chopped onion
4. 1 teaspoon turmeric powder
3. 1 – 2 teaspoon red chili powder (I use Kashmiri chili powder which has deep red color but less heat)

1. 2 teaspoon salt
12. 3 medium tomatoes (2 cups blended/pureed/grated with no water added)
2. 2 tablespoon lemon juice
8. 2″ cinnamon sticks
7. 1 teaspoon cumin seeds
